Quinoa is a gluten free super food with higher protein content from other cereals. This cereal was the sacred food of the Incas and also consumed by the prehispanics.

Quinoa is also recognized for containing a high percentage of essential amino acids for human nutrition.

After the conquest, growing amaranth was considered a sacrilege because it was linked to the deepest of pre-Columbian traditions. The crops and their use were forbidden. But despite that, some brave farmers saved it from extinction.

Human health benefits

– Studies indicate that adding quinoa to diet helps reduce cholesterol, levels of sugar in blood and triglycerides.

– It is also recommended for people with celiac disease (gluten).

-In addition, it is easily digestible, high in fiber and gluten-free.

-Quinoa has the equivalent value of meat protein and is an ingredient that is
used in many gourmet dishes.

Geographical distribution

In Peru, quinoa is distributed in the Andes, from Colombia to Chile and Argentina, and has also been introduced in other countries of the northern hemisphere.

Puno is the main producer of quinoa with approximately 82% of the sowing, followed in order of importance by Junín, Arequipa, Cusco, Huancavelica, Áncash, Ayacucho and Apurímac.
